1. SIDDU

ABOUT SIDDU:

 Siddu is one of the most popular and famous local food of Narkanda and upper areas of Himachal. It is just a kind of bread which is of round shape, made up of wheat flour. The preparation of Siddu is difficult and time-consuming. But for the taste that it renders, every minute of preparation is worth.

HOW IT IS MADE:

To make a Siddu you have to make a mixture of wheat and Yeast. The wheat flour is kept for 4-5 hours for the yeast to settle down. Later the dough is filled with stuffing and put on the direct flame to get half cooked and then this partly cooked dough is steamed either in “Siddu maker” or in a pressure cooker to cook and to keep the taste and nutrients of the ingredients. There are both types of Siddus salty or sweet.

HOW IT IS SERVED:

Now I am going to tell you how Siddu, the local food of Narkanda is served. Normally it is eaten or served with Desi Ghee, or with daal, tea or sometimes with chutney made up of mint. Siddu can easily be found in the local restaurants of Narkanda to give a touriststs a flavor of Himachali cuisine.

2. GUCCHI (CHEUN KI SABZI)

ABOUT GUCCHI:

Gucchi or a Cheun is a wild mushroom which is found in the upper hills of the Himalayas in the rainy season. Narkanda is very famous place where Gucchi is found. Gucchi is one of the most expensive luxury local food of Narkanda. It is a unique and delicious dish. The biological name of Gucchi is ” Morel”. It is also used for a medicinal purpose that was the one main reason it was so expensive. There is no other product which is so expensive like Gucchi. Morels (Gucchi) are mushrooms which belong to morchella family and are distinguished from other mushrooms by their spongy honey cumbe heads. It contains a vast amount of savourly flavor.

HOW IT IS MADE :

Gucchi ki sabzi is one of the most famous, delicious or expensive local food of Narkanda. The Gucchi is made in several styles – Somewhere first it is fried in the oil and than it is cooked like a normal vegetable and somewhere first it is soaked in the water and than it is cooked like a normal vegetable with potato. It can be cooked immediately after it is found, Firstly it should be dried in the sun than it is cooked or can be sold for medicinal purposes.

Gucchi ki sabzi is a famous local food of Narkanda which is rich in vitamins and proteins. It is helpful to cure various types of diseases. It is served like a normal vegetable with chapati and prantha. But it’s taste is very diffrent and delicious from other vegetables.

3. PAKAIN

ABOUT PAKAIN :

Pakain is another famous crispy local food of Narkanda. It is just like a kachori of North India. The name of this dish varies from area to area. Somewhere it is known as   “Pakain” and somewhere it is known as – “Poldu”. The crisp and scrumptious taste of the Pakain is amazing. It is basically a traditional dish of Narkanda which was made by people on all famous occasions like – Marriages, Shivratri, Sajja (Lohri), etc.

HOW IT IS MADE:

Pakain is a local food of Narkanda. It is made from wheat flour and always remember it cannot be made just in a minute. The wheat flour is kept in 5-6 hours for yeast. Pakain needs a couple of hours as it is a dough yeast based. The dough is filled with a stuffing of potatoes, til, banjeree, affim Dana according to taste and then it is fried like Kachori in oil until it gets a golden brown color.

4. PAHARI PULAO

Pulao also known as Tudkiya Bhat is another tasty local food of Narkanda which provides a scrumptious taste of Pahari cuisine. Tudkiya Bhat is an authentic Pulao of local people of Narkanda that Pahari people cook in their own very style. What unique? The dish is not only cooked with Indian spices but an extra add up to the lentils potatoes and yogurt along with onions provides the dish such a great taste that which will make you want it again and again.

HOW IT IS MADE:

The Pulao is one of the authentic local food of Narkanda. It is made from rice like Biryanni. Firstly the rice was soaked in water than it is cooked by adding onion, tomatoes, potatoes, yogurt, garlic, cinnamon, cardaman etc Indian spices which gives a unique taste to the dish.

5. PATEER OR DHINDRA

ABOUT DHINDRA :

Dhindra is another unique local food of Narkanda which is made by Pahari people. It is one of the most popular dishes in local villages of upper Shimla. Basically, this Dhindra is made from the big leaves of “Kachallu” and stuffed with wheat flour and Besan.

HOW IT IS MADE :

As I already have told you that basically these Dhindra or Pateer is made from the leaves of “Kachaalu” (Aarbi). The leaves of this ‘Aarbi’ is stuffed with wheat flour and, Besan and other Indian spices than it is cooked in a Pressure cooker and at lastly it is fried in oil which makes it crispy.

HOW IT IS SERVED:

The Dhindra or Pateer is one of the Best Local food of Narkanda. It is served with Tea, and with pudina chutney. Which gives a great taste to this dish. Some people also make him like a vegetable and served it with chapatis and pranthas.

6. MEETHA BATH OR “BRANJ”

ABOUT BRANJ:

Branj is a name given to the sweet local food of Narkanda commonly known as ” Meetha Bath”. It is yellow-colored sweet rice which is mainly made in some occasions like a wedding and any other function.. It is so tasty that if once a person tastes it he will never forget its taste.

HOW IT IS MADE:

Meetha, as the name suggests, is a local dessert of upper Himachal. It is prepared with sweetened rice mixed with a generous helping of various dry fruits. Basically, the rice is fried by adding a yellow color in it.

HOW IT IS SERVED :

The dish Meetha Bath or Branj is normally made in occasions. It is a sweet dish which normally served in occasions and festivals of Local Village.

7. LINGAAD KI BHAJHI

ABOUT LINGAAD BHAJHI:

Lingaad ki Bhajhi is another wild local food of Narkanda. Lingaad is of green color vegetable mostly found in the Jungles of Upper Himachal. It is not easy to find , only experienced person can identify it because there was another green thing in Jungle which looks similar as Lingaad but it is not lingaad but something poisonous. So it is not as much easy to find Lingaad as it looks.

HOW IT IS MADE :

Lingaad is made like a normal vegetable in” Kadai”. But it is difficult to clean because it contain black hairs which is not easy to clean. And for better taste we have to cut this Lingaad in small pieces only than it becomes tasty dish.

HOW IT IS SERVED :

Lingaad, although it is found in the forests of upper areas of Himachal. But it is like a normal vegetable. But this vegetable is specially rich in minerals and proteins. It is served with chapatis or pranthas. In some of the villages the people also made “Aachar” of it and than sell it in the cities.

8. RECHI

ABOUT RECHI :

Rechi is another tradition Local food of Narkanda. It is also found in forests of upper areas of Himachal and Narkanda is famous place for “Rechi’s”. This is also a one variety of Mushroom. which is unique in taste. Sometimes it is also known as brown umbrella mushrooms because it’s shape is like Umbrella. Sometimes it is also used to make “Aachar” which is also unique in taste

HOW IT IS MADE :-

Rechi is another vegetable which is found in forest. Firstly it is properly washed and than it is cleaned and than it is made like an normal vegetable in “Kadai” by adding onion, tomatoes, garlic and other Indian spices which gives him best taste.

HOW IT IS SERVED :-

Rechi is one of the most famous fish like “Gucchi” of Narkanda. It is one of the Best Local food of Narkanda which is well known for its unique taste. The sabzi of Rechi is normally served with chapatis and pranthas.

9. BAADI

ABOUT BAADI :

Badi is another traditional local food of Narkanda. It is one of the very oldest dishes of Pahari people. It is one of the most healthy dish. Basically, a “Badi” is not specially made from any special thing. But it is only made up of wheat flour and served with “Ghee”.

HOW IT IS MADE:

Basically this Badi is made up of wheat flour in” Ghee “. It is made as per the taste of person. In some areas sugar is added to it which likes Meetha Badi to eat and in some areas salt is added to it if they like to eat” Namkeen Badi”

HOW IT IS SERVED:

 Normally as per local tradition the Badi is served with “Ghee”. Local Desi Ghee provides an amazing taste to the “Badi”.

10. SEERA

ABOUT SEERA:

Seera is again a sweet dish of upper area of Himachal. It is one of the Best local food of Narkanda. A very healthy dish made up of grains. It is made by grinding of grains. One of best sweet dish of upper Himachal.

HOW IT IS MADE:

Seera is made in Kadai. Some people made it by adding sugar in it. Some made by a ‘chasni’ of Gur. It vary from people to people, all depends upon their taste.

HOW IT IS SERVED:

The Seera is normally served in marriages or any other occasions. Sometimes People  also eat  seera of ‘gur’ for curing cough. Gur contains antioxidents which is helpful for removing cough, A person who cannot eat Gur directly can eat seera of Gur which is helpful for removing cough.

11. INDREE

ABOUT INDREE :

 Indree is another famous Local food of Narkanda which is normally made in the month of Winter. This item is made up of local brown daal known as “Kolth”. It is one of the healthy and tasty dishes. Indree is the traditional dish of upper areas of Himachal. It is made by grinding Kolth and than steaming it. Earlier the Kolth was grinded on stones. But nowadays with the advanced technology, the people use Mixture grinder to grind the Kolth. So nowadays this dish can be easily made.

HOW IT IS MADE :

As I already have told you above that Indree is made from” Kolth ” Firstly Kolth is poured in water for around 7-8 hours than it is grinded in mixture till paste was made. After making a paste of it than spices, green coriander leaves, etc is added to it for making the best flavor. Then this paste is added over the big leaves of ” Narangi” than it is boiled either in sidu maker or in kadai by adding water. Finally when paste becomes hard then it becomes ready to eat.

HOW IT IS SERVED:

The Indree is normally served with tea and also by making bhurji of it it is also served with chapatis and pranthas. Really it is one of the Best delicious local food of Narkanda.

12. LAUTA (CHILRA)

ABOUT LAUTA:

Lauta commonly known as “Chilra” is also an tasteful blend of beautiful Pahari cuisine and one of the Best Local food of Narkanda. It is like “thepla” made up from liquid wheat flour and served with desi chutney and with Ghee.

HOW IT IS MADE:

Lauta commonly known as ” Chilra” is made from wheat flour. Water is added in wheat flour in order to make it thick liquid paste than it is cooked on “Tava” by adding Ghee. And while making thick paste of wheat flour the leaves of coriander, chopped onion, potatoes etc are also added in order to bring delicious flavor in it.

HOW IT IS SERVED:

Lauta or “Chilra” is normally served with Desi Ghee, Pudina or Dhaniya chutney. It is one of the Best delicious Local food of Narkanda.

13. VADE

ABOUT VADE:

Bade is another crispy local food of Narkanda which is made up of daal commonly known as “Mash”. With this” Bade” Narkanda have added a unique twist to popular kachoris of North India. Bade is round in shape which is made up of “maash” or of” urad “Bade can be made of” black maash “or from” white uraad “. It vary from people to people from which they make. But Believe me it is one of best delicious crispy dish of upper Himachal.

HOW IT IS MADE:

. Bade is made from daal named as” Black Mash ” or” White Urad”. It vary from choice of the people from which they made. Firstly Daal is soaked in water for around 6-7 hours than it is grind in the mixture. After this all the dry masalas, and green leaves of coriander is added on it. Than after making a dough of it, it is deeply fried in the oil.

HOW IT IS SERVED:

 Bade is normally served with Pudina chutney or with Tea. Normally in upper area of Himachal like Narkanda it is a tradition that “Bade” is made on the day of “Shivratri”. It is very crispy and delicious to eat. The crisp and the scrumptious of this dish will make you never to forget the conventional kachories of “mash” of Pahari people of Narkanda.

14. KHOORU

Khooru is another local food of Narkanda that has its origin from the mountains. It is also called as Kheru. It is a 5 minute recipe that is made with basic masalas like turmeric, cinnamon, red chilies, and churned curd, The masalas are firstly prepared and then curd is poured into it. After this, it is stirred for a while, and in two minutes it is ready.

This dish is loved by the locals very much. You will find this in each house and every alternate day. This dish can be enjoyed with rice, Missi Roti, Siddu, Babru etc.

15. BATHU KHEER

You might have tried a variety of sweet dishes but I bet you have not tasted a dish like bathu kheer. It also has its origin from the mountains. This dish is made up of milk, sugar, dry fruits and chenopodium seeds. The more it is cooked, the better it gets. But a constant stir is required. It can be eaten when it is hot as well as when it is cold. In both, you will have a different taste.

16. CHHA GOSHT

So if you are the one who loves non-veg food, then this dish is a must for you to try. Chha Gosht is a recipe made up of a lamb marinated with local masalas and cooked with the gravy made up of churned curd. It is cooked within a time period of one to two hours. This is a recipe that you can have with naan, chapati, rice and missi roti.

17. LAAPHI

In winters, the dish which is loved the most is Laaphi. It is made up of corn and wheat grinded with chenopodium seeds. Although, it is difficult to find this food item in the hotels. But if you try to find this dish in villages then there is the possibility that you will find this dish. This dish is a bit hard to prepare and time-consuming as well. But all that hard work, believe me, is worth it.

18. KHOBDI

If you will ask the kids of villages that what is the best local food they like 75 percent is the possibility is that you will get Khobdi as the answer. This dish is prepared with rice, curd, local masalas, and dough of wheat flour. This dish is quite easy to make and very delicious to it. But again, this dish cannot be found in the hotels and restaurants.
